    Peruvian-born Marjorie Silva opened Azucar Bakery in 2006 to fill a hole in a town more accustomed to cupcakes and pie than flan and Suspiro de Limeña. Rapid growth led Silva and her team to relocate in 2011 to their current location on South Broadway, a shiny, pink-frosted space befitting the goodies within. Silva’s crew does cakes, cookies, and all sorts of confections, but they specialize in Latin and South American delicacies. Think alfajor cookies with house-made dulce de leche squeezed between shortbread. Flan dripping with caramel. Peruvian mocha Pionono cake stuffed with coffee cream. The bakery can also accommodate special orders and gluten-free needs.

    Steve Scott had worked at numerous restaurants, bakeries and even as a pastry chef at the University of Colorado before he decided to open his own place, Babettes, in the Source in 2013. “The bakery is all mine, I make all the decisions, I’m not making anyone else’s formulas, and there’s no compromise in quality,” he says. “Our breads are 100 percent artisan, handmade products made by me, and I’m baking breads that I truly want to make.” And that's what bread lovers truly want to eat, judging from how popular Babettes quickly became. In 2019, Babettes moved to Longmont and added a wood-fired pizza oven.

But it's staffed by young guys who really know their Jewish doughnuts, and if you go early (it closes at 2 p.m. on the dot most days), you can look right through the doors to the huge bakery in the back, with vats of bagels steaming in their water and guys working the dough. You can smell the place doing things right, and pick up not only a passable version of an East Coast egg bagel, but a half-dozen fantastic salt bagels for less than six bucks.

    Independent doughnut shop Baked N Denver officially launched inside an old Winchell's building in July 2020 (back then, it was called Wake & Bake). The name may have changed , but it still turns out a variety of classic doughnuts along with breakfast sandwiches and burritos, coffee and juice. You'll find a few nods to modern trends (some Oreo crumbles here, some bacon there), but old favorites like the buttermilk bars, raised maple doughnuts and cinnamon crumb cake doughnuts are so good, they taste like a revelation.

    You won't need to hock Grandpa's watch to afford banh mi at Baker's Place, a clean but spartan Vietnamese bakery on Federal Boulevard; everything here is still on the cheap. There are over a dozen variations on the classic Vietnamese sandwich -- including a fried-egg version, along with the standard pork, beef and chicken fillings. A few stools along a street-facing counter comprise the only seating at Baker's Palace, so a takeout order may be a better option for savoring your banh mi, boba smoothie and rice-based dumplings.

The only thing more tantalizing than a sweet treat from here is the promise of more to come as Bergin prepares to open a second, bagel-focused concept called Rich Spirit in Wheat Ridge.

    Steven Roland, owner of the Boulangerie, is best known for his baguettes and other crusty French and Italian loaves. But leave it to a guy who once worked as a private chef at the British Embassy in Oslo to also put out the best scone in town. These golden, fruit-filled treats are so impossibly tender, you know they're filled with plenty of butter, buttermilk and cream. Flavors vary, so you can drop by for blueberry-almond one day and cherry the next. Settle into the sunny space with something to read and a piping hot Americano and be glad that Roland, who moved to Colorado in 2017, chose to make Denver home.

    Cook's Fresh Market is a quick stop on the 16th Street Mall shuttle circuit, but you'll want to get off and stay a while once you get a glimpse of the gourmet bakery, deli, prepared-foods case, cheese counter and shelves stocked with homemade nibbles, European specialty foods and spices. There's even a small cooler in the back with bundles of fresh vegetables for purchase. But Cook's is more than willing to do the cooking for you: You can order lunch or dinner from the bistro menu and enjoy it in the modest dining area. The offerings include an epicurean salad with grilled chicken, duck or lots of fresh veggies, as well as build-your-own sandwiches with prosciutto, salami or chevre topped with spinach, sprouts or mixed greens. Owners/chefs Ed and Kristin Janos, who both graduated from the Culinary Institute of America, buy and serve local products and make everything from scratch using their own recipes.

    Since 1992, Daniel's of Paris has turned authentic French pastries and a host of other European bakery favorites in a modestly sized shop in a fairly obscure Aurora strip mall. The croissants here are flaky, light and baked fresh with or without a dark-chocolate-filled center for a pain au chocolat, and the signature cinnamon rolls are iced with fondant and have warm, gooey middles filled with almond cream. Daniel’s also does both special-occasion and everyday cakes using French sponge cake, flavored sugar syrup and frosting, glaze or ganache ? and creamy mousse or whipped-cream fillings. Oven treats such as cookies, petit fours, quiche, fruit tarts and a splendid, mascarpone-stuffed Pumpkin Amandine available during the holidays are what set Daniel’s of Paris apart, both as a neighborhood staple and a popular city bakery.
