Copper Kettle Brewing opened in April 2011 on the border of Denver and Aurora, hoping to fill a geographic hole in the metro area's craft-beer scene. But owners Jeremy Gobien and Kristen Kozik had no idea just how thirsty their neighbors would be: Within months, they expanded their brewing capacity by 166 percent. The taphouse itself doesn't serve food, but it is elegantly furnished and keeps menus on hand so patrons can have food delivered to pair with Copper Kettle's ever-rotating list of German- and American-style brews.

Like a fresh beer poured quickly, Dry Dock's tap room has foamed up and over the sides in the past few years, attracting a regular clientele from Aurora as well as a steady stream of beer pilgrims who make the journey from the city to the suburbs. The brewery and tap room now feature 170 seats, along with tables and a fireplace, shuffleboard and other games, and a stack of menus for ordering food to be delivered; there's also an attached home-brew shop where you can sip while you shop. And then there's the ever-changing lineup of award-winning beers, served on tap and in firkins. Dry Dock is the perfect place to make port.

Formerly an at-home mead maker, David Myers turned his avocation into a vocation when he opened Redstone Meadery. The company's website states that he started Redstone with the "natural philosophy" of producing "the highest quality honey wine on the market." His not-too-sweet bottled and draft meads are making the elixir accessible to the masses while turning Myers into a brewing revolutionary or sorts. Redstone products are currently being shipped to twenty states around the country; fortunately for us, those same meads can be sampled at the Boulder-based tap room six days a week.

Founded in 2014 by Tommy Bibliowicz and his family, 4 Noses has grown steadily, building both its beer selection and its reputation. In 2016, the brewery's Pump Action Imperial Pumpkin Ale swept the two most prestigious beer competitions, winning gold at the World Beer Cup and the Great American Beer Festival. But pumpkin beers are just the beginning. What the brewery has really become known for are its IPAs, including ’Bout Damn Time, a canned flagship that is one of the most delicious representations of the style in Colorado, and Imperial ’Bout Damn Time. 4 Noses also started an Ad Hoc series of creative and experimental beers, and turns out other solid cans, like Laika Boss Russian Imperial Stout, and draft-only one-offs served in the lovely, cozy taproom.

Kelly and Cary Floyd opened Arvada Beer Company in 2011 in a 95-year-old brick building that was gutted and restored. The airy spot now anchors a corner in Olde Town Arvada with a steady stream of regulars and newcomers who want to try the beers designed by Kelly, an award-winning homebrewer and one of the few female beer makers in Colorado. The tasting room – which features empty malt bags hanging from the ceiling -- seats about 130 people and features a dozen beers on tap at all times. There’s no food, but if you order some of the amazing fries from Mannekin Frites next door, they’ll deliver them to you at your spot in the brewery.

In September 2013, Harry Smith, a longtime brewer at Breckenridge Brewery, opened Black Sky Brewery, just a block from his old employer and with Breckenridge's full support. Black Sky, which dishes up Connecticut-style pizza along with its beer, was a long time in the making. As noted on its website, the brewery's 23 taps feature both "in-house and guest brews." There's also a heavy-metal theme to the decor and the beer names. The brewery itself has a seven-barrel brewing system that contains old pieces of equipment from Breckenridge; outside, you'll find a patio, a parking lot and a mural.
