    At their worst, wine lists are pompous, stratospherically overpriced, ridiculously long, awkwardly categorized and full of overexposed, yawn-inducing labels. But at Caveau Wine Bar, the 75-bottle list (55 are available by the glass) is an easy-to-navigate document of new discoveries, small producers and familiar but not overrated labels. The polished yet easygoing staff is well-versed in wine education and just as enthusiastic about pushing a $30 bottle of vino as a three-digit one, which is a welcome change to the rigorous sport of upselling. Those prowling for deals know to show up at 4 p.m. for the daily happy hour.

    For years, if you needed a place to take a date, you’d go to the Village Cork. If you were meeting up with the girls, you’d go to the Village Cork. But when it was time for dinner, you’d go elsewhere. Now, thanks to a makeover in fall 2014, this onetime wine bar is on its way to being the kind of restaurant that owner Lisa Lapp always envisioned. Watch the cooks at work with a seat at the new wraparound chef’s counter, or just enjoy their handiwork as your seasonally inspired courses arrive. Soups are especially good, followed by heartier fare such as hanger steak with peppercorn sauce, a bone-in pork chop with cherry demi-glace, or chicken curry. There's also a new bar with a full liquor license, but what hasn't changed -- and what's still the best thing about the Cork -- is the far-reaching list of wines by the bottle and glass.

Wine isn’t the only focus, though. The menu includes an array of Neapolitan-style pizzas prepared in a wood-fired oven imported from Italy, plus salads and build-your-own meat-and-cheese plates. On weekends, musical acts perform in the dining room, making for a lively, unpretentious way to enjoy drinks centered on grapes, not hops.

    Wine cubbies line the back wall of the high-ceilinged sliver of Larimer Square space occupied by Cru: A Wine Bar. The richly appointed room fills with an after-work crowd in the late afternoon, as business types wind down over a glass of wine and a snack during happy hour while others rev up for a big evening ahead. Later at night, the low cherry tables and bar are illuminated by the soft glow of candles, and the conversations get more intimate. Although the big draw is wine - offered by the bottle, by the glass and in dozens of wine flights - Cru proffers sizable cheese and charcuterie boards as well as a full dinner menu to soak up all that alcohol. The wine menu is more international, with bottles that originate everywhere from South America to California; the food selection includes cheese plates and stone-fired pizzas. All the servers give you very personalized attention, and that and the bar's intimate feel make this a perfect choice for a romantic rendezvous or a laid-back meeting.

Weekends are hopping here, but nice happy-hour specials await midtown workers Tuesday through Friday.     After Govnr's Park Tavern closed, residents of Capitol Hill were left wondering what would take the place of the old bar and grill and its neighbor, Lala's Wine Bar + Pizzeria, which closed at the same time. After a complete overhaul of the entire space, the owners of Angelo's Taverna and Carboy Winery unveiled Logan Street in the Govnr's Park location in 2019, along with the attached winery and tasting room next door. The light, Mediterranean-inspired menu and wide-open dining room proved exactly what the neighborhood needed, and guests have been packing the place ever since. Wood-grilled seafood, flatbread pizzas and mini pitas are big draws, and Carboy's Colorado wines attract customers to the corner wine bar, where charcuterie boards complement the riesling, cabernet franc and merlot.

    A beverage that fell from heaven and by some stroke of luck landed in Denver, the Venetian Cream Coffee at the Molecule Effect is so good, it has to be divine in origin. Buttery-smooth and tooth-achingly sweet, this coffee drink comes straight out of a tap like a swirling caramel ribbon of liquid dessert. Served over ice, the chilled concoction is too good to set down. But don't chug it; this nectar of the gods is really meant to be savored. Don't have a sweet tooth? Not to worry: This cute little cafe also serves savory sandwiches and a selection of Colorado wine, beer and whiskey.

    The interplay between food and wine is a passion for Vivek and Sanju Beri, owners of the Palate Food + Wine Bar in Greenwood Village. “Wine pairings can be such magical experiences,” says Sanju, a certified sommelier who honed her hospitality skills as general manager at fine-dining restaurants in Longmont and Lake Tahoe. “If you have limited options in food, how are you going to do that?” Thus the menu far exceeds the meat-and-cheese boards of many wine bars, with a deep roster of Mediterranean-influenced dishes such as lamb ribs with pomegranate molasses, beet ravioli stuffed with goat cheese, and lentil-mushroom soup with curry cream. In addition to lengthy lunch and dinner selections, nearly a dozen and a half small plates are offered all day, convenient for people looking for a bite when the Landmark’s movie theater and comedy club let out at all hours – and just as convenient for curious types looking for a dish to pair with each new glass, poured yourself from bottles lined up in high-end illuminated cellars.

Making an entire meal of this stuff can get expensive fast, but for a quick appetizer before the main course or an after-dinner stop for a last glass and a final nibble, Sketch is ideal.
