    Located in a charming, homey building in the heart of The Hill, a neighborhood filled with college students, Cafe Aion attracts an older crowd by blurring the line between dining out and dinner party. The owners conceived of their restaurant while skiing, and they did all the renovation work themselves. They also worked hard on the menu, which focuses on small plates made from seasonal ingredients. During brunch on a summer weekend, the sweeping outdoor veranda is a prime spot for French-press coffee and a crossword puzzle.

In 2021, the restaurant partnered with the Savory Institute’s Land to Market regenerative agriculture program, through which it sources sustainably raised beef for its steak-focused menu; that’s rounded out by a vast array of tapas and pintxos to keep nibblers happy. Outstanding gin tonics, an impressive wine list and a surprising selection of vermouth by the glass make this an ideal place to relax over sips and snacks, or go all out for a truly indulgent dining experience.

    Tucked behind Lucky's Market in a north Boulder parking lot, this typically quiet casual dinner spot has a warm dining room that invokes the Mediterranean, the region that also inspired the menu. There are dishes rooted in Spain -- including tapas such as Spanish tortilla, pancetta-wrapped shrimp and steamed clams -- and in Italy, with wood-fired pizzas and pastas rounding out the roster. The wine-and-beer list focuses on bottles from Spain and Italy, too, and it's supplemented by a full bar with a more classic international bent. Nightly specials include traditional Mediterranean dishes and a tapas happy hour. There's a Monday paella deal, too, and a broad, gluten-free menu is always available.

    After a five-year stint cooking in San Sebastian and Barcelona, Curt and Deicy Steinbecker moved back to Denver and decided to start a restaurant. They picked up the subterranean space in Cherry Creek North that had been French 250, gave the perpetually dark spot a shot of warmth with golds and reds, and opened Ondo's in the fall of 2009. From the start, they wanted to give diners a true Spanish experience, complete with sherry cocktails, an all-Spanish (and decidedly geeky) wine list, and treats imported from the Iberian peninsula, including conservas, chorizo and some of the best croquetas you'll find outside of Spain. If you're looking for tapas, the Steinbeckers have the top spot in town, offering a true taste of the Mediterranean in the Mile High City.

    Sabor Latino's feel-good ambience makes this decades-old northwest Denver joint easy to love. The dining room is comfortably rustic, with an atmosphere that hangs somewhere in that inviting, tender middle ground between aging white-tablecloth class and neighborhood eclecticism. The menu is half-Mexican standards and half-greatest hits of Central and South American cuisines (some holdovers from the original owners and location on 32nd Avenue); almost all of it is very, very good.
